Egg in a hole but with Latino American influences.
This is my take on fried egg toast but with a flair. Mainly known as Egg in a Hole, but I find that silly to say… This breakfast toast is pretty quick and doesn't take too much time to make. Typically, at my house the chirmol, which is a Guatemalan salsa, is made fresh with meals, but all I had was chunky store bought salsa which was still good. The dish can be served without salsa, but what's the point to the recipe if there is no salsa? This recipe serves 1-2 people. You can adjust ratios to serve more people. Makes: 2 Toasts | Serves: 1-2 people | |
Pumpkin Flower Fried Egg Toast
Ingredients:
2 slices of bread
2 eggs
2 flowers, 4 small ones
Shredded Cheese
Salsa
Salt and pepper to taste
2 tbsp of butter, divided
How to make:
Prepare your bread: Take a cup or a cookie cutter and punch out a circle from the center of the bread and set aside
Prepare the squash blossoms remove the stem from the petals and was the petals in water. Pat dry to get rid of excess moisture.
Heat a pan with a tablespoon of butter
After the butter melts, stir fry the flower blossoms till they turn orange in color take them out of the pan and set aside
Place the slices of bread on the hot pan with the second tbs of butter
Place the stir fried flowers in the wells of the bread and crack an egg into each well. Let it fry till golden brown
When ready, flip the toast over and let it continue to cook, add more butter if needed (but it should be enough to coat the other side as well.)
Add the cheese on top and cook with a lid on so the cheese can melt and the egg can finish cooking, Should take 1-2 minutes.
When done serve right away with salsa.
